Asian-Inspired Beef and Broccoli Rice Bowls

Ingredients
  

  • 1 pound ground beef
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup beef broth
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • 4 cups broccoli florets
  • 3 cups cooked white rice
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions
 

  • Brown the ground beef and diced onion in a skillet over medium heat until the beef is no longer pink. Drain any excess fat.
  • Add the browned beef mixture to the slow cooker along with the minced garlic, soy sauce, beef broth, brown sugar, sesame oil, and ground ginger. Stir to combine.
  • Cover and cook on low for 4 hours.
  • About 30 minutes before serving, steam the broccoli florets until bright green and tender-crisp.
  • Serve the beef mixture over the cooked white rice. Top each bowl with steamed broccoli, sliced green onions, and sesame seeds.

Notes

Steam the broccoli separately right before serving so it stays bright and crisp instead of getting soft in the slow cooker. If the sauce tastes too salty after cooking, stir in an extra tablespoon of beef broth before serving. Leftovers reheat well in the microwave with a splash of water to loosen the sauce.
