Bat-Shaped Sweet Potato Quesadillas
Course Snack
Cuisine American
Large skillet
Potato masher
Bat-shaped cookie cutter
- 2 medium sweet potatoes, peeled and diced
- 1 1/2 cups shredded cheddar cheese
- 8 small flour tortillas
- 3 tablespoons butter
- 1/4 teaspoon ground cinnamon
Place the diced sweet potatoes in a pot of water and boil until very soft, about 12 minutes. Drain well and mash with the cinnamon until smooth.
Lay out four tortillas and spread a layer of mashed sweet potato over each one. Sprinkle cheddar cheese evenly on top of the sweet potato.
Top each with a second tortilla to form four quesadillas. Press down gently so they hold together.
Heat 1 tablespoon of butter in a large skillet over medium heat. Cook two quesadillas at a time for 2 to 3 minutes per side until golden and the cheese has melted. Add the remaining butter as needed for the second batch.
While the quesadillas are still warm, press a bat-shaped cookie cutter firmly through each one to create the shapes. Serve right away.
Press the cookie cutter while the quesadillas are warm for the cleanest edges. The mashed sweet potato can be made a day ahead and kept in the fridge so assembly stays quick. If the mixture seems dry, add a small splash of milk when mashing to keep it spreadable.
