Course Snack
Cuisine American
Servings 4 people

Equipment

  • Baking sheet
  • three mixing bowls
  • oven

Ingredients

  • 1 pound chicken tenders
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  • Heat the oven to 400 degrees and line a baking sheet with parchment paper.
  • In one bowl stir together the panko breadcrumbs, garlic powder, smoked paprika, salt, and black pepper.
  • Place the flour in a second bowl and the beaten eggs in a third bowl.
  • Dip each chicken tender first in the flour, then in the eggs, then in the breadcrumb mixture, pressing lightly so the crumbs stick.
  • Set the coated tenders on the prepared baking sheet and drizzle the olive oil over the top.
  • Bake for 20 minutes, turning once halfway through, until the coating is golden and the chicken reaches 165 degrees inside.
  • Let the tenders rest for two minutes, then arrange them on a plate in pairs so they look like bat wings.

Notes

Press the breadcrumbs on firmly during coating so the dark paprika color shows up well once baked. If the tenders cool before serving, a quick two-minute return to a warm oven restores crispness without drying the chicken. Skip the oil drizzle only if you prefer a lighter finish, but it helps the coating brown evenly.
