BBQ Chicken Macaroni Salad with Crispy Onions

Ingredients
  

  • 8 ounces elbow macaroni
  • 2 cups shredded cooked chicken
  • 1/2 cup barbecue sauce
  • 1/3 cup mayonnaise
  • 1/2 cup chopped celery
  • 1/4 cup chopped red onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup crispy fried onions

Instructions
 

  • Bring a large pot of salted water to a boil and cook the elbow macaroni according to package directions until al dente. Drain the pasta in a colander and rinse under cold water to cool it quickly.
  • Place the shredded cooked chicken in a large mixing bowl and stir in the barbecue sauce until the chicken is evenly coated.
  • Add the cooled macaroni to the bowl with the chicken. Stir in the mayonnaise, chopped celery, chopped red onion, salt, and black pepper until everything is well combined.
  • Cover the bowl and refrigerate the salad for at least one hour to let the flavors blend.
  • Just before serving, sprinkle the crispy fried onions over the top of the salad.

Notes

Prepare the salad base up to a day ahead and keep it covered in the fridge, but add the crispy fried onions right before serving so they stay crunchy. If the salad seems dry after chilling, stir in a spoonful of extra mayonnaise to loosen it. Use a thick barbecue sauce to prevent the dressing from becoming too thin once mixed with the pasta.
