Preheat the oven to 400°F. Mix the pulled pork with the barbecue sauce in a bowl until the meat is evenly coated. Spread the mixture across the bottom of a greased 8x8 inch baking dish.
In a second bowl, whisk the cornmeal, flour, baking powder, and salt together. Add the milk, egg, and melted butter, then stir until the batter is just combined. Fold in the shredded cheddar cheese.
Pour the cornbread batter over the pork layer and spread it to the edges. Bake for 25 to 30 minutes until the top turns golden brown and a toothpick inserted in the center comes out clean.
Notes
Let the bake rest for 10 minutes after removing it from the oven so the layers set for easier square portions. If the cornbread browns too quickly, loosely cover the dish with foil for the last 10 minutes of baking.
