- 8 ounces gin
- 4 ounces beetroot juice
- 12 fresh sage leaves
- 2 ounces fresh lemon juice
- 1 ounce simple syrup
- Ice cubes
- Club soda to top
- 4 sage sprigs for garnish
Place 8 sage leaves in a cocktail shaker with the lemon juice and simple syrup. Muddle gently for 20 seconds to release the oils.
Add the gin, beetroot juice, and a handful of ice cubes to the shaker.
Secure the lid and shake vigorously for 15 seconds until the mixture is well chilled.
Fill four glasses with fresh ice cubes. Strain the mixture evenly into each glass.
Top each glass with club soda and stir once to combine.
Garnish each drink with a fresh sage sprig before serving.
Muddle the sage just enough to release aroma without making the drink bitter. If the beetroot juice tastes very earthy, add an extra splash of lemon juice to brighten it. Prepare the base mixture without ice up to two hours ahead and store it in the fridge, then shake and top with soda right before serving.
