Spoon
- 8 ounces gin
- 1 cup fresh blood orange juice
- 4 sprigs fresh rosemary
- Ice cubes
- 32 ounces tonic water
- 4 blood orange slices, for garnish
Fill four highball glasses with ice cubes to chill them and keep the drink cold.
Pour 2 ounces of gin and 1/4 cup of blood orange juice into each glass.
Lightly bruise one rosemary sprig by gently pressing it with the back of a spoon, then add it to each glass to release its oils.
Top each glass with 8 ounces of tonic water and stir once to combine.
Add one blood orange slice to the rim of each glass as a garnish.
Muddle the rosemary just enough to scent the drink without making it bitter. If blood oranges are out of season, use regular orange juice mixed with a splash of cranberry for similar color. Serve right after adding the tonic to keep the bubbles lively.
