Bloody Eyeball Caprese Skewers
Course Appetizer
Cuisine Italian
Wooden skewers
Small knife
Serving platter
- 12 cherry tomatoes
- 12 bocconcini mozzarella balls
- 24 fresh basil leaves
- 12 black olives, sliced into rings
- 1/4 cup balsamic glaze
- 12 short wooden skewers
Press one black olive ring into the center of each mozzarella ball to form the pupil of the eyeball.
Thread one cherry tomato onto a skewer, followed by one basil leaf, then one prepared mozzarella eyeball, and finish with a second basil leaf.
Repeat the process with the remaining ingredients until all 12 skewers are assembled.
Place the finished skewers on a serving platter and drizzle the balsamic glaze evenly over the top.
Assemble the eyeballs up to two hours ahead and keep them covered in the fridge, then add the tomato and basil right before guests arrive so the leaves stay bright. If the balsamic glaze is too thick, warm it slightly for easier drizzling. Skip extra salt since the olives already bring enough savoriness.
