Bloody Tomato Bruschetta Cups
Course Appetizer
Cuisine Italian
Servings 4 people

Equipment

  • Baking Sheet
  • Mixing Bowl
  • Knife

Ingredients

  • 12 mini phyllo cups
  • 2 cups cherry tomatoes, diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Place the mini phyllo cups on a baking sheet and warm them in a 350 degree oven for 5 minutes to crisp the shells.
  • In a mixing bowl, combine the diced cherry tomatoes, minced garlic, chopped basil, olive oil, salt, and black pepper. Stir gently until the tomatoes are evenly coated.
  • Spoon the tomato mixture into each warmed phyllo cup, filling them just to the top.
  • Drizzle a small amount of balsamic glaze over each filled cup right before serving.

Notes

Use ripe cherry tomatoes for the best color and juiciness. If you make the tomato mixture ahead, store it in the fridge and fill the cups just before guests arrive to keep the shells crisp. A light extra sprinkle of salt on top can sharpen the flavors if the tomatoes taste mild.
