BLT Pasta Salad with Avocado and Buttermilk Dressing

Ingredients
  

  • 8 ounces short pasta such as rotini
  • 6 slices bacon
  • 1 pint cherry tomatoes, halved
  • 2 cups chopped romaine lettuce
  • 1 ripe avocado, diced
  • 1/2 cup buttermilk
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped chives
  • Salt and black pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the pasta until al dente, then drain and rinse under cold water to cool it quickly.
  • Place the bacon in a skillet over medium heat. Cook until crisp, then transfer to a paper towel-lined plate to drain. Crumble once cooled.
  • In a small bowl, whisk together the buttermilk, mayonnaise, lemon juice, chives, salt, and black pepper until smooth.
  • In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, chopped romaine, and crumbled bacon.
  • Add the diced avocado and pour the dressing over the salad. Toss gently until everything is evenly coated.

Notes

Add the avocado and romaine right before serving so they stay fresh and crisp. If making ahead, store the dressing separately and toss everything together at the party. Leftovers keep well in the fridge for one day if the lettuce is kept out until the last minute.
