Bourbon Caramel Apple and Brie Tartlets
Course Appetizer
Cuisine American
- 12 mini tartlet shells
- 2 medium apples, peeled and diced
- 6 ounces brie cheese, cut into small cubes
- 3 tablespoons butter
- 1/2 cup brown sugar
- 1/4 cup bourbon
- 1 teaspoon ground cinnamon
- Pinch of salt
Preheat the oven to 375 degrees. Arrange the mini tartlet shells on a baking sheet.
Melt the butter in a skillet over medium heat. Add the diced apples and cook for 3 minutes until they begin to soften.
Stir in the brown sugar, bourbon, cinnamon, and salt. Simmer the mixture for 4 to 5 minutes until the liquid thickens into a caramel that coats the apples.
Remove the skillet from the heat. Place a few cubes of brie into each tartlet shell, then spoon the warm apple mixture over the cheese.
Bake the filled tartlets for 8 to 10 minutes until the brie melts and the shells turn golden.
Use firm apples like Granny Smith so they hold their shape after cooking. If the caramel thickens too much before filling, add a splash of bourbon off the heat to loosen it. These tartlets taste best served warm, but you can assemble them up to two hours ahead and bake just before guests arrive.
