Budget Slow Cooker Black Bean Chili

Ingredients
  

  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 cup water
  • 1 teaspoon salt

Instructions
 

  • Add the diced onion and minced garlic to the slow cooker.
  • Pour in both cans of black beans and the can of diced tomatoes with their liquid.
  • Sprinkle the chili powder, cumin, smoked paprika, and salt over the top.
  • Add the water and stir everything until the spices are evenly distributed.
  • Cover and cook on low for 6 to 8 hours.
  • Stir once more before serving to check the thickness.

Notes

If the chili thickens too much during cooking, stir in a splash of water before serving. Leftovers reheat well on the stove with a little extra water to loosen the texture. You can swap the water for any broth you have in the pantry without changing the flavor balance.
