Cuisine American
Servings 4 people

Equipment

  • Mixing Bowl
  • Baking Sheet

Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons black cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 1/3 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped apples
  • 1/4 cup caramel bits
  • 12 candy eyes

Instructions

  • Heat the oven to 350 degrees and line a baking sheet with parchment paper.
  • Stir together the flour, black cocoa powder, and baking soda in a medium bowl.
  • In a separate bowl, beat the butter and brown sugar until smooth, then mix in the egg and vanilla extract.
  • Add the dry ingredients to the wet mixture and stir until a dough forms.
  • Fold in the chopped apples and caramel bits until evenly distributed.
  • Scoop rounded tablespoons of dough onto the baking sheet, spacing them a few inches apart.
  • Bake for 10 to 12 minutes until the edges are set.
  • Press two candy eyes onto each cookie while they are still warm, then let the cookies cool on the sheet.

Notes

Place the candy eyes as soon as the cookies come out of the oven so they stick without extra icing. If the caramel bits spread more than expected, gently reshape the cookies right after baking. Store leftovers in an airtight container at room temperature for up to three days.
