Charred Rosemary Gin Fizz
Course Drink
Cuisine American
Servings 4 people

Equipment

  • Cocktail shaker
  • Kitchen torch
  • Highball glasses

Ingredients

  • 8 ounces gin
  • 8 sprigs fresh rosemary
  • 4 ounces fresh lemon juice
  • 2 ounces simple syrup
  • 4 large egg whites
  • Ice cubes
  • 12 ounces club soda

Instructions

  • Use a kitchen torch to char 4 rosemary sprigs until the leaves darken and release a smoky scent. Set them aside for garnish.
  • Place the gin, lemon juice, simple syrup, egg whites, and the remaining 4 fresh rosemary sprigs into a cocktail shaker. Dry shake without ice for 30 seconds to build foam.
  • Add ice to the shaker and shake again for another 20 seconds until well chilled.
  • Strain the mixture evenly into 4 ice-filled glasses.
  • Top each glass with club soda and stir gently. Place one charred rosemary sprig in each glass to finish.

Notes

Char the rosemary right before serving so the smoke stays noticeable. If you prefer less herbal intensity, use only 3 fresh sprigs in the shaker instead of 4. The drink holds its foam best when served right after the final shake.
