Cheesy Beef and Spinach Lasagna Skillet

Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 24 ounces marinara sauce
  • 1 cup water
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 5 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Cook the ground beef, onion, and garlic in a large skillet over medium heat until the beef is browned. Drain any excess fat.
  • Stir in the Italian seasoning, marinara sauce, and water. Bring the mixture to a simmer.
  • Add the broken lasagna noodles. Cover the skillet and cook for 15 to 20 minutes, stirring now and then, until the noodles are tender.
  • Stir in the spinach and cook until it wilts.
  • Drop spoonfuls of ricotta across the top. Sprinkle the mozzarella and Parmesan over everything. Cover and cook for 3 to 5 minutes until the cheese melts.

Notes

Stir the ricotta gently into the noodles right before adding the shredded cheese if you want a creamier texture throughout. Leftovers keep well in the fridge for up to three days and reheat easily in the microwave with a splash of water to loosen the sauce.
