Heat the olive oil in a large pot over medium heat. Add the cubed pork roast and cook until browned on all sides, about 5 to 7 minutes.
Add the diced onion and minced garlic to the pot. Cook for 3 minutes until the onion softens.
Stir in the minced chipotle peppers, cumin, and oregano. Cook for 1 minute to release the spices.
Pour in the fire-roasted diced tomatoes, chopped fire-roasted red bell peppers, and chicken broth. Bring the mixture to a simmer.
Reduce the heat to low, cover the pot, and cook for 1 hour 15 minutes until the pork is fork-tender.
Taste and season with salt and black pepper. Ladle the stew into bowls and top with chopped cilantro. Serve with lime wedges on the side.
