Season the pork chops with salt, pepper, and thyme on both sides.
Heat a large skillet over medium-high heat and sear the pork chops for 2 minutes per side until lightly browned. Transfer them to the slow cooker.
Add the sliced mushrooms, onion, and garlic to the same skillet. Cook for 3 minutes until the mushrooms start to soften.
Stir in the cream of mushroom soup and chicken broth until the mixture is smooth. Pour this sauce over the pork chops in the slow cooker.
Cover and cook on low for 6 hours until the pork is tender.
About 15 minutes before serving, cook the egg noodles in a large pot according to package directions. Drain and toss with the butter.
Serve the pork chops and mushroom sauce over the buttered noodles. Sprinkle with chopped parsley.
