Creamy Tuscan Chicken with Spinach and Sun-Dried Tomatoes

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 8 ounces cream cheese, cubed
  • 1 cup sun-dried tomatoes in oil, drained
  • 1 cup chicken broth
  • 3 cups fresh spinach
  • 4 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

Instructions
 

  • Place the chicken breasts in the bottom of the slow cooker.
  • Add the cream cheese cubes, sun-dried tomatoes, chicken broth, minced garlic, Italian seasoning, salt, and black pepper.
  • Cover and cook on low for 6 hours until the chicken is tender.
  • Remove the chicken and shred or slice it, then return it to the slow cooker.
  • Stir in the spinach and Parmesan cheese until the spinach wilts and the sauce turns creamy.

Notes

Stir the spinach in right before serving so it stays bright green instead of overcooking. If the sauce seems too thick, add a splash of extra broth before the final stir. Leftovers reheat well on the stove with a little milk to loosen the cream sauce.
