Creamy Tuscan Garlic Chicken with Spinach and Tomatoes

- 4 boneless, skinless chicken breasts
- 4 garlic cloves, minced
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
Place the chicken breasts in the slow cooker. Add the minced garlic, chicken broth, Italian seasoning, salt, and black pepper.
Cover and cook on low for 6 hours until the chicken is tender.
Remove the chicken and shred or slice it. Return it to the slow cooker.
Stir in the heavy cream and Parmesan cheese. Add the fresh spinach and cherry tomatoes.
Cover and cook on low for 30 more minutes until the spinach wilts and the sauce thickens slightly.
Add the cream and spinach near the end so the sauce stays smooth and the greens keep their color. Serve the chicken over rice or pasta to soak up the sauce. Leftovers reheat well on the stovetop with a splash of broth to loosen the sauce.
