Creepy Crawly Granola with Pumpkin Seeds and Dried Fruit
Course Breakfast
Cuisine American
Servings 4 people

Equipment

  • Baking Sheet
  • Large Mixing Bowl

Ingredients

  • 3 cups rolled oats
  • 1 cup raw pumpkin seeds
  • 1/2 cup mixed dried fruit, chopped
  • 1/4 cup honey
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  • Preheat the oven to 325 degrees and line a baking sheet with parchment paper.
  • In a large bowl, stir together the rolled oats, pumpkin seeds, cinnamon, and salt.
  • Pour the honey and melted coconut oil over the dry mixture and stir until everything is evenly coated.
  • Spread the mixture in a thin, even layer on the prepared baking sheet.
  • Bake for 20 minutes, then stir and bake for 10 more minutes until the granola turns golden.
  • Remove from the oven and let it cool completely on the baking sheet before stirring in the chopped dried fruit.

Notes

Stir the dried fruit in only after the granola has cooled so the pieces stay chewy instead of hardening. Store leftovers in a jar at room temperature for up to a week. For a different texture, press the warm granola into clusters before it cools.
