Creepy Crawly Squid Ink Pasta
Course Main Course
Cuisine Italian
Servings 4 people

Equipment

  • Large Pot
  • Large Skillet
  • Colander

Ingredients

  • 1 pound squid ink linguine
  • 1/3 cup extra virgin olive oil
  • 5 garlic cloves, thinly sliced
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt, plus more for pasta water
  • 20 pitted black olives
  • 2 tablespoons chopped fresh parsley
  • Grated Parmesan cheese for serving

Instructions

  • Bring a large pot of salted water to a boil and cook the squid ink linguine until al dente. Reserve 1/2 cup pasta water, then drain the pasta.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes and cook until the garlic turns light golden.
  • Add the drained pasta to the skillet along with the salt. Toss to coat, adding a splash of reserved pasta water if the mixture looks dry.
  • Turn off the heat and stir in the chopped parsley.
  • Make the olive spiders by cutting 12 olives in half lengthwise for bodies. Slice the remaining olives into thin strips to form eight legs per spider. Place one spider on top of each serving.

Notes

Assemble the olive spiders right before serving so the legs stay in place. If the pasta sits too long it will darken further, so serve it straight from the skillet. Leftovers reheat well in a covered pan with a teaspoon of water to loosen the strands. Skip the cheese if you want a dairy-free version.
