Place the chicken breasts in the bottom of the slow cooker. Pour the chicken broth over the top.
Add the minced garlic, sun-dried tomatoes, Italian seasoning, salt, and black pepper.
Cover and cook on low for 5 to 6 hours, until the chicken reaches an internal temperature of 165 degrees.
Remove the chicken from the slow cooker and shred or slice it. Return it to the slow cooker.
Stir in the heavy cream and Parmesan cheese until the sauce is smooth.
Add the fresh spinach and stir until it wilts, which takes about 5 minutes.
