Crockpot Garlic Parmesan Chicken Breast with Asparagus

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 4 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter, melted
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Place the chicken breasts in a single layer inside the crockpot.
  • In a mixing bowl, stir together the melted butter, minced garlic, chicken broth, Italian seasoning, salt, and black pepper.
  • Pour the butter mixture evenly over the chicken breasts.
  • Sprinkle half of the Parmesan cheese over the chicken.
  • Arrange the asparagus pieces around the chicken in the crockpot.
  • Cover and cook on low until the chicken reaches an internal temperature of 165°F and the asparagus is tender.
  • Sprinkle the remaining Parmesan cheese and the chopped parsley over the top before serving.

Notes

Add the asparagus only after the chicken has cooked for a while if you prefer it more crisp. Freshly grated Parmesan melts better than pre-shredded and gives a smoother sauce. Leftovers reheat well in a covered skillet with a splash of broth to keep the chicken moist.
