Course Main Course
Cuisine Irish
Servings 4 people

Equipment

  • Slow Cooker
  • Skillet

Ingredients

  • 1.5 pounds beef stew meat
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 (12-ounce) bottle Guinness stout
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 4 medium potatoes, cubed
  • 3 carrots, sliced
  • 1/2 head green cabbage, chopped
  • Salt and pepper to taste

Instructions

  • Heat the olive oil in a skillet over medium heat. Add the stew meat and brown on all sides.
  • Add the diced onion and minced garlic to the skillet. Cook for 2 minutes until the onion softens.
  • Sprinkle the flour over the meat and stir to coat everything evenly.
  • Transfer the mixture to the slow cooker. Pour in the Guinness and beef broth, then stir in the tomato paste, thyme, and bay leaves.
  • Add the cubed potatoes, sliced carrots, and chopped cabbage. Stir gently to combine.
  • Cover and cook on low for 8 hours.
  • Remove the bay leaves, season with salt and pepper, and serve.

Notes

The cabbage releases a bit of liquid as it cooks, so check the stew near the end and add a splash of broth if it seems too thick. Leftovers taste even better the next day once the flavors have settled.
