Crockpot Ham and White Bean Soup

Ingredients
  

  • 1 pound cooked ham, diced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions
 

  • Place the diced onion, carrots, celery, and minced garlic in the bottom of the slow cooker.
  • Add the diced ham and drained white beans on top of the vegetables.
  • Pour in the chicken broth and add the dried thyme, bay leaf, salt, and pepper.
  • Stir gently to combine all ingredients.
  • Cover and cook on low for 6 to 8 hours.
  • Remove the bay leaf before serving.

Notes

If the soup thickens too much during the potluck, stir in a splash of broth or water right before serving. You can prep the vegetables the night before and store them in the fridge to save time on the day of the event. Leftovers reheat well on the stovetop with a little extra broth to loosen the texture.
