Glasses
- 1 cup fresh dragon fruit, cubed
- 8 ounces tequila
- 1/2 cup fresh lime juice
- 1/4 cup agave nectar
- 2 cups chilled sparkling water
- Ice cubes
- Lime wedges and dragon fruit slices for garnish
Place the cubed dragon fruit in a blender and pulse until smooth. Strain the puree through a fine mesh sieve into a pitcher if you prefer a smoother drink.
Add the tequila, lime juice, and agave nectar to the pitcher. Stir well until the agave dissolves completely.
Pour in the chilled sparkling water and stir gently to combine without losing too much fizz.
Fill four glasses with ice cubes. Divide the mixture evenly among the glasses.
Add a lime wedge and a slice of dragon fruit to each glass before serving.
Use ripe dragon fruit for the brightest color and best sweetness. If the drink tastes too tart, add a bit more agave nectar before adding the sparkling water. Prepare the base mixture without the sparkling water up to two hours ahead and keep it chilled, then top with the water right before serving to keep it fizzy.
