Dulce de Leche Banana Bread Pudding

Ingredients
  

  • 4 cups cubed day-old bread
  • 2 ripe bananas, sliced
  • 1/2 cup dulce de leche, plus 2 tablespoons for drizzling
  • 1 cup whole milk
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons unsalted butter, melted

Instructions
 

  • Heat the oven to 350 degrees and lightly grease a small baking dish.
  • In a mixing bowl, whisk together the milk, eggs, sugar, vanilla, cinnamon, and salt until smooth.
  • Add the bread cubes and sliced bananas to the bowl. Pour in the 1/2 cup dulce de leche and the melted butter. Stir gently until the bread is coated.
  • Transfer the mixture to the prepared dish and spread it evenly.
  • Bake for 35 to 40 minutes, until the top is golden and the center is set.
  • Remove from the oven and drizzle the remaining 2 tablespoons dulce de leche over the warm pudding before serving.

Notes

Let the pudding rest for 10 minutes after baking so the custard firms up for cleaner scoops. If you make it ahead, cover and refrigerate, then warm individual portions in the microwave for 30 seconds to restore the soft texture. A pinch more cinnamon on top before baking deepens the caramel flavor without overpowering the bananas.
