Easy Crockpot Lemon Chicken Orzo Soup

Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 4 cups low sodium chicken broth
  • 2 carrots, peeled and sliced
  • 2 celery ribs, sliced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 lemon, juiced and zested
  • 1 tsp dried oregano
  • 1 cup uncooked orzo
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped

Instructions
 

  • Add the chicken breasts to the slow cooker along with the broth, carrots, celery, onion, garlic, oregano, salt, and pepper.
  • Cover and cook on low for 6 hours until the chicken is fully cooked and tender.
  • Remove the chicken from the pot, shred it with two forks, and return the pieces to the broth.
  • Stir in the orzo along with the lemon juice and lemon zest.
  • Cover and cook on high for 20 to 30 minutes until the orzo is tender.
  • Ladle into bowls and top each serving with fresh parsley.

Notes

The orzo continues to absorb liquid after cooking, so stir in a splash of extra broth when reheating leftovers to loosen the texture. Taste the soup before serving and add more lemon zest if you prefer a brighter flavor. Skip the parsley if you do not have it on hand, since it serves only as a fresh finish.
