Blender
Espresso machine
Glasses
- 4 shots espresso, cooled
- 1 cup pumpkin puree
- 3/4 cup heavy cream
- 1/4 cup sugar
- 2 teaspoons pumpkin pie spice
- 4 ounces coffee liqueur
- Ice cubes
- Whipped cream, for serving
- Ground cinnamon, for garnish
Place the pumpkin puree, heavy cream, sugar, and pumpkin pie spice in a blender. Blend until the mixture is smooth and the sugar has dissolved.
Add the cooled espresso shots and coffee liqueur to the blender. Blend again for a few seconds until everything is fully combined.
Fill four serving glasses with ice cubes.
Pour the blended mixture evenly over the ice in each glass.
Finish each drink with a dollop of whipped cream and a light dusting of ground cinnamon.
Make the espresso several hours ahead so it has time to cool completely before blending. If the pumpkin mixture seems too thick, add a splash of cream to loosen it. Serve right away to keep the whipped cream topping from melting into the drink.
