Ethiopian Berbere-Spiced Lentil Stew with Onions
Course Soup
Cuisine Ethiopian
Servings 4 people

Equipment

  • Large Pot
  • Cutting Board
  • Knife

Ingredients

  • 1 1/2 cups red lentils, rinsed
  • 3 large yellow onions, thinly sliced
  • 3 tablespoons berbere spice blend
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons tomato paste
  • 4 cups vegetable broth
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • Chopped fresh parsley for garnish

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the sliced onions and cook, stirring often, until they soften and turn golden, about 8 minutes.
  • Stir in the garlic and ginger. Cook for 1 minute until fragrant.
  • Add the berbere spice and tomato paste. Stir for 30 seconds to coat the onions and release the spice aroma.
  • Pour in the vegetable broth and add the rinsed lentils and salt. Bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and simmer for 20 minutes, stirring once or twice, until the lentils break down and the stew thickens.
  • Remove the pot from the heat. Ladle the stew into bowls and top each serving with chopped parsley.

Notes

Cook the onions slowly at the start so they turn sweet and form the base flavor of the stew. If the berbere blend you use is very spicy, start with 2 tablespoons and taste before adding the rest. Leftovers thicken more in the fridge, so add a splash of broth when reheating on the stove.
