Cuisine Italian
Knife
Wooden Skewers
Serving Platter
- 12 cherry tomatoes
- 12 bocconcini mozzarella balls
- 12 black olives, pitted and sliced into rounds
- 24 fresh basil leaves
- 2 tablespoons balsamic glaze
- 12 wooden skewers
Place one olive slice on top of each mozzarella ball to create the look of an eyeball.
Thread one cherry tomato onto a skewer, followed by two basil leaves and one prepared mozzarella ball.
Repeat with the remaining ingredients until all 12 skewers are assembled.
Arrange the skewers on a platter and drizzle the balsamic glaze over the top just before serving.
Assemble the skewers no more than an hour ahead so the basil stays bright. If you need a dairy-free version, swap the mozzarella for firm tofu cubes and keep the olive slices on top. Store any leftovers in an airtight container in the fridge for up to one day, though the tomatoes may soften.
