Eyeball Caprese Salad Skewers
Course Appetizer
Cuisine Italian
Servings 4 people

Equipment

  • Wooden skewers
  • Knife
  • Serving plate

Ingredients

  • 12 small mozzarella balls (bocconcini)
  • 12 cherry tomatoes
  • 12 fresh basil leaves
  • 12 pitted black olives
  • 1/4 cup balsamic glaze
  • 12 wooden skewers

Instructions

  • Slice each black olive in half lengthwise to create the pupil pieces.
  • Press one olive half gently onto each mozzarella ball so it stays in place and forms the center of the eyeball.
  • Thread one prepared mozzarella ball, one basil leaf, and one cherry tomato onto each wooden skewer in that order.
  • Arrange the finished skewers on a serving plate.
  • Drizzle the balsamic glaze evenly over the skewers just before serving.

Notes

Press the olive halves firmly but carefully so they stay centered without tearing the mozzarella. If the olives slide, add a small drop of balsamic glaze as glue before threading. These skewers taste best assembled the same day and can be made a couple hours ahead if kept covered in the fridge. Skip the glaze until right before serving to keep the mozzarella from getting soggy.
