Refrigerator
- 1 package (3 oz) lime gelatin mix
- 1 cup boiling water
- 1 cup cold water
- 4 clear plastic cups
- 4 canned lychees, drained
- 4 blueberries
- 1 cup whipped cream
Pour the lime gelatin mix into a mixing bowl and add the boiling water. Stir until the powder is completely dissolved.
Stir in the cold water until the mixture is smooth and evenly combined.
Divide the gelatin mixture evenly among the four clear plastic cups.
Gently press one drained lychee into the center of each cup so it sits just below the surface. Place one blueberry inside each lychee to form the pupil.
Place the cups in the refrigerator and chill until the jello is fully set, about four hours.
Just before serving, add a spoonful of whipped cream to the top of each cup.
Drain the lychees well on a paper towel before adding them so extra liquid does not thin the jello. Prepare the cups a day ahead and keep them covered in the fridge, then add the whipped cream right before guests arrive. If you prefer a milder flavor, use a sugar-free gelatin mix.
