Course Appetizer
Cuisine American
Servings 4 people

Equipment

  • Mixing bowl
  • Baking sheet
  • Wooden skewers

Ingredients

  • 1 pound ground turkey
  • 1/2 cup Italian breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 small fresh mozzarella balls
  • 12 pitted black olives, halved
  • 4 wooden skewers
  • 1 cup marinara sauce, for serving

Instructions

  • Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the ground turkey, breadcrumbs, egg, minced garlic, oregano, salt, and black pepper. Mix until just combined.
  • Shape the mixture into 12 meatballs of equal size and place them on the prepared baking sheet.
  • Bake the meatballs for 18 to 20 minutes until cooked through and lightly browned.
  • Remove the meatballs from the oven and let them rest for 5 minutes.
  • Thread three meatballs onto each wooden skewer.
  • Top each meatball with one mozzarella ball, then press an olive half into the center of the cheese to form the eyeball.
  • Serve the skewers with marinara sauce on the side for dipping.

Notes

Use smaller meatballs if you want more skewers for a larger group, and press the mozzarella firmly so it stays in place once the meatballs cool slightly. If the turkey mixture feels too wet, add an extra tablespoon of breadcrumbs before shaping.
