Frankenstein Avocado Toast Sliders
Course Appetizer
Cuisine American
Servings 4 people

Equipment

  • Toaster
  • Mixing Bowl
  • Knife

Ingredients

  • 4 slices whole wheat bread
  • 2 ripe avocados
  • 1 lime, juiced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 black olives, sliced
  • 4 cherry tomatoes, halved
  • 8 fresh chives

Instructions

  • Toast the 4 slices of whole wheat bread until golden and crisp. Cut each slice into two rectangles to make 8 slider bases.
  • Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Add the lime juice, salt, and black pepper, then mash until smooth but still chunky.
  • Spread the mashed avocado evenly over the 8 toast rectangles.
  • Place two olive slices on each slider to form eyes. Add one halved cherry tomato below the eyes to create a mouth.
  • Lay one chive across the top of each slider to resemble hair. Serve right away.

Notes

Use firm bread so the toast stays sturdy under the avocado. If the mash sits too long, stir in a little extra lime juice to keep the color bright. These sliders taste best fresh, but you can prep the avocado mixture up to an hour ahead and cover it tightly with plastic wrap pressed against the surface.
