Frankenstein Zucchini Fritters
Course Appetizer
Cuisine American
Servings 4 people

Equipment

  • Box grater
  • Large skillet
  • Mixing bowl

Ingredients

  • 3 medium zucchini, grated and squeezed dry
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons vegetable oil
  • 8 black olives, sliced

Instructions

  • Grate the zucchini and squeeze out excess moisture in a clean towel. Place the zucchini in a mixing bowl.
  • Add the eggs, breadcrumbs, Parmesan, parsley, garlic powder, salt, and pepper. Stir until the mixture holds together.
  • Heat the vegetable oil in a large skillet over medium heat. Scoop about 1/4 cup of the mixture for each fritter and flatten it slightly in the pan.
  • Cook the fritters for 3 to 4 minutes per side until golden and firm. Remove them to a plate lined with paper towels.
  • Once the fritters cool slightly, press olive slices onto each one to form eyes and a mouth.

Notes

Squeeze the zucchini well so the fritters stay crisp instead of steaming in the pan. The parsley adds extra green flecks that show up nicely after cooking. Make the mixture ahead and keep it covered in the fridge for a few hours before frying. Leftovers reheat best in a dry skillet to restore the crunch.
