Course Main Course
Cuisine French
Servings 4 people

Equipment

  • Slow Cooker

Ingredients

  • 1.5 pounds beef stew meat
  • 4 large onions, thinly sliced
  • 4 cups beef broth
  • 1 packet dry French onion soup mix
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Crusty bread, for serving

Instructions

  • Add the beef stew meat to the slow cooker.
  • Layer the sliced onions on top of the beef.
  • In a bowl, stir together the beef broth, French onion soup mix, Worcestershire sauce, thyme, and black pepper.
  • Pour the broth mixture over the onions and beef.
  • Cover and cook on low for 8 hours until the beef is fork-tender.
  • Ladle the stew into bowls and serve with crusty bread on the side.

Notes

Slice the onions ahead and store them in the fridge if you want to speed up morning assembly even more. The stew thickens slightly as it sits, so add a splash of broth when reheating leftovers. Skip extra salt at the start since the soup mix already carries seasoning.
