Ghostly Cheese-Stuffed Mushrooms
Course Appetizer
Cuisine American
Servings 4 people

Equipment

  • Baking sheet
  • Mixing bowl
  • Spoon

Ingredients

  • 16 large white button mushrooms, stems removed
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 12 thin slices black olives

Instructions

  • Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the cream cheese, mozzarella cheese, minced garlic, salt, pepper, and parsley until smooth.
  • Spoon the cheese mixture into each mushroom cap, filling them evenly and mounding the top slightly.
  • Place the filled mushrooms on the baking sheet and bake for 18 to 20 minutes until the mushrooms soften and the cheese melts.
  • Remove from the oven and let them cool for 2 minutes. Press two olive slices onto each mushroom to form ghost eyes.

Notes

Stuff the mushrooms up to a day ahead and keep them covered in the fridge, then bake just before serving. If the cheese firms up after baking, pop them back in the oven for two minutes to restore the creamy texture. Skip the olives if you prefer a plain cheesy version.
