Course Main Course
Cuisine Italian
Servings 4 people

Equipment

  • Baking sheet
  • Mixing bowl
  • Oven

Ingredients

  • 1 pound pizza dough
  • 1 cup ricotta cheese
  • 2 cups fresh spinach leaves
  • 1 1/2 cups shredded mozzarella cheese
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt

Instructions

  • Preheat the oven to 450 degrees F and place the pizza dough on a baking sheet. Stretch it into a round or rectangle shape.
  • In a mixing bowl, stir together the ricotta cheese, minced garlic, salt, and 1 tablespoon of olive oil until smooth.
  • Spread the ricotta mixture evenly over the dough, leaving a small border around the edges.
  • Scatter the fresh spinach leaves across the ricotta layer, then sprinkle the shredded mozzarella on top.
  • Drizzle the remaining tablespoon of olive oil over the pizza.
  • Bake for 12 to 15 minutes until the crust is golden and the cheese has melted.

Notes

Arrange the spinach leaves into simple ghost shapes before adding the mozzarella so the white ricotta shows through for a fun effect. Leftovers reheat well in a 350 degree oven for a few minutes to restore crispness to the crust. You can swap baby spinach for regular spinach if that is what you have on hand.
