Ginger-Soy Asian Hamburger Stew with Green Onions
Course Soup
Cuisine Asian
Servings 4 people

Equipment

  • Large pot
  • Wooden spoon

Ingredients

  • 1 pound ground beef
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 4 cups beef broth
  • 1/4 cup soy sauce
  • 2 carrots, peeled and sliced
  • 2 cups chopped green cabbage
  • 4 green onions, sliced
  • Salt and pepper to taste

Instructions

  • Heat the vegetable oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  • Add the chopped onion, minced garlic, and minced ginger to the pot. Stir and cook for 2 minutes until the onion softens.
  • Pour in the beef broth and soy sauce. Stir to combine and bring the mixture to a simmer.
  • Add the sliced carrots and chopped cabbage. Cover and simmer for 15 minutes until the vegetables are tender.
  • Taste and add salt and pepper if needed. Remove from heat and stir in the sliced green onions just before serving.

Notes

Simmer the cabbage only until it softens slightly so it keeps some bite. Leftovers reheat well on the stove with a splash of water to loosen the broth. Skip the cabbage and use bok choy instead if you prefer a quicker-cooking green.
