Course Main Course
Cuisine Italian
Large Pot
Large Skillet
Colander
- 12 ounces penne pasta
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup zucchini slices
- 1/2 cup green peas
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
Bring a large pot of salted water to a boil and cook the penne pasta according to package directions until al dente. Drain and set aside.
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
Add the broccoli florets and sliced carrots to the skillet. Stir and cook for 3 minutes.
Add the zucchini slices and green peas. Continue cooking for another 3 to 4 minutes until the vegetables are tender but still bright.
Add the drained pasta to the skillet. Toss everything together and season with salt and black pepper.
Remove from heat and sprinkle the grated Parmesan cheese over the top. Toss once more before serving.
Use a blacklight at the table to make the green vegetables stand out for the glow-in-the-dark effect. If the carrots need more time, add them first before the softer zucchini and peas. Leftovers reheat well in a skillet with a splash of water to loosen the pasta.
