Grapefruit Thyme Tequila Spritz
Course Drink
Cuisine Mexican
Servings 4 people

Equipment

  • Cocktail shaker
  • Muddler
  • Jigger
  • Highball glasses

Ingredients

  • 8 ounces tequila
  • 1 cup fresh grapefruit juice
  • 4 sprigs fresh thyme, plus extra for garnish
  • 2 ounces agave syrup
  • 16 ounces sparkling water
  • Ice cubes
  • Grapefruit slices for garnish

Instructions

  • Place the thyme sprigs and agave syrup in a cocktail shaker. Gently muddle to release the herb oils into the syrup.
  • Add the tequila, grapefruit juice, and a handful of ice cubes to the shaker. Secure the lid and shake for 15 seconds until well chilled.
  • Fill four highball glasses with fresh ice cubes. Strain the mixture evenly into each glass.
  • Top each glass with 4 ounces of sparkling water and stir once to combine. Add a grapefruit slice and a thyme sprig to each glass before serving.

Notes

Make the base mixture without the sparkling water up to two hours ahead and keep it in the fridge. Add the sparkling water right before serving to keep the fizz. If the grapefruit tastes too tart, stir in an extra half ounce of agave per glass. Use a light blanco tequila so the grapefruit and thyme stay front and center.
