Graveyard Taco Salad Cups
Course Appetizer
Cuisine Mexican
Servings 4 people

Equipment

  • Large skillet
  • Serving cups

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 4 cups shredded romaine lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 2 cups crushed tortilla chips
  • 12 whole tortilla chips
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives

Instructions

  • Cook the ground beef in a large skillet over medium heat until browned and no pink remains. Drain any excess fat.
  • Stir the taco seasoning into the beef along with the amount of water called for on the packet. Simmer for 5 minutes until the mixture thickens.
  • Place 1 cup of shredded romaine lettuce into each of 4 clear serving cups.
  • Divide the seasoned beef evenly among the cups, spooning it over the lettuce.
  • Top each cup with diced tomatoes and shredded cheddar cheese.
  • Sprinkle 1/2 cup of crushed tortilla chips over the cheese in each cup to create the "dirt" layer.
  • Add a dollop of sour cream to the center of each cup and press 3 whole tortilla chips upright into the sour cream to stand as tombstones.
  • Scatter sliced black olives around the base of the upright chips.

Notes

Crush the tortilla chips just before assembling so they stay crisp under the sour cream. If your kids prefer milder flavors, use a reduced-sodium taco seasoning packet. Leftovers keep best when stored without the crushed chips and tombstones added; simply top them fresh when ready to eat.
