Grilled Shrimp and Pineapple Skewers with Cilantro Lime Sauce

Ingredients
  

  • 1 pound large shrimp, peeled and deveined
  • 2 cups fresh pineapple chunks
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons lime juice
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 wooden skewers, soaked in water for 30 minutes

Instructions
 

  • In a small bowl, stir together the cilantro, lime juice, olive oil, garlic, salt, and pepper to make the sauce.
  • Thread the shrimp and pineapple chunks onto the soaked skewers, alternating pieces.
  • Brush the skewers lightly with half the sauce, reserving the rest for serving.
  • Heat a grill to medium heat and place the skewers on the grates.
  • Cook for 2 to 3 minutes per side until the shrimp turn pink and the pineapple shows light grill marks.
  • Remove the skewers from the grill and drizzle with the remaining sauce before serving.

Notes

Soak the skewers well ahead of time so they do not burn on the grill. Use fresh pineapple rather than canned so the chunks stay firm during cooking. If you want a creamier sauce, stir a spoonful of plain yogurt into the reserved portion right before drizzling.
