Halloween Sprinkle Funfetti Bundt Cake

Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/3 cup Halloween-themed sprinkles, plus 2 tablespoons for topping

Instructions
 

  • Preheat the oven to 350°F and grease a small bundt pan well.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, beat the butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • Alternate adding the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients, and mix until just combined.
  • Gently fold in the 1/3 cup of Halloween sprinkles.
  • Pour the batter into the prepared bundt pan and smooth the top.
  • Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  • Sprinkle the remaining 2 tablespoons of sprinkles over the top before serving.

Notes

Use a gentle folding motion when adding the sprinkles so the colors stay bright instead of bleeding into the batter. Store any leftovers in an airtight container at room temperature for up to two days. If you need to make the cake ahead, bake it the day before and add the final sprinkles right before serving to keep them crisp.
