Equipment

  • Mixing Bowl
  • Baking Sheet
  • Oven

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup chopped apples
  • 1/2 cup caramel candies, chopped

Instructions

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • Whisk together the flour, baking soda, salt, and cinnamon in a medium bowl.
  • In a separate bowl, beat the softened butter and brown sugar until smooth. Add the egg and vanilla extract, then mix until combined.
  • Stir the dry ingredients into the wet mixture until a dough forms. Fold in the chopped apples and caramel candies.
  • Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them a few inches apart.
  • Bake for 10 to 12 minutes, until the edges turn light golden. Let the cookies cool on the sheet for 5 minutes before moving them to a wire rack.

Notes

Chop the caramel candies into small pieces so they spread evenly instead of pooling in one spot. If the dough feels too sticky from the apples, chill it for 10 minutes before scooping. These cookies keep well in an airtight container for two days and taste best reheated for a few seconds in the microwave to soften the caramel again.
