Equipment

  • Mixing Bowl
  • 8x8 Baking Pan

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 12 chocolate sandwich cookies, crushed
  • 8 thin rectangular cookies
  • 2 tablespoons green sprinkles

Instructions

  • Preheat the oven to 350 degrees and line an 8x8 baking pan with parchment paper.
  • In a mixing bowl, stir together the melted butter and sugar until smooth. Add the eggs and vanilla extract, then mix well.
  • Stir in the cocoa powder, flour, and salt until no dry streaks remain. Fold in the chocolate chips.
  • Spread the batter evenly in the prepared pan. Bake for 20 to 22 minutes until the center looks set but still soft. Let the brownies cool completely in the pan.
  • Cut the cooled brownies into 8 small squares. Press the crushed chocolate sandwich cookies on top of each square to cover the surface.
  • Stand one rectangular cookie upright in the center of each brownie bite to form a tombstone. Scatter the green sprinkles around the base of the tombstones.

Notes

Crush the sandwich cookies just before topping so they stay crisp. If the rectangular cookies feel too tall, snap them in half before inserting. Store leftovers in an airtight container at room temperature for up to two days to keep the fudgy texture.
