Hearty Crockpot Lentil and Sausage Soup

Ingredients
  

  • 1 pound smoked sausage, sliced into rounds
  • 1 cup green lentils, rinsed
  • 1 medium onion, chopped
  • 2 carrots, peeled and chopped
  • 1 can (14 oz) diced tomatoes
  • 3 cups vegetable broth
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions
 

  • Place the sliced sausage, rinsed lentils, chopped onion, carrots, diced tomatoes, vegetable broth, minced garlic, and oregano into the crockpot.
  • Stir everything together, then season with salt and black pepper.
  • Cover the crockpot and cook on low for 6 to 8 hours until the lentils are soft and the sausage is heated through.
  • Stir once more before serving to blend the flavors.

Notes

If the soup thickens too much overnight, stir in a little extra broth when reheating. Smoked sausage gives the best flavor here, but you can swap in mild Italian sausage if that is what you have on hand. Leftovers store well in the fridge for up to three days.
