Hearty Turkey and White Bean Chili

Ingredients
  

  • 1 pound ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 (15-ounce) cans white beans, drained and rinsed
  • 1 (4-ounce) can diced green chiles
  • 3 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions
 

  • Heat a large skillet over medium heat. Add the ground turkey, diced onion, and minced garlic. Cook until the turkey is browned and the onion softens, breaking up the meat as it cooks.
  • Transfer the turkey mixture to the slow cooker. Add the drained white beans, diced green chiles, chicken broth, cumin, chili powder, and oregano.
  • Stir everything together and season with salt and black pepper. Cover and cook on low for 6 hours.
  • Stir the chili once more before serving to check the consistency.

Notes

If the chili seems too thick after cooking, stir in a splash of extra broth. Leftovers store well in the fridge for three days and reheat gently on the stove without losing texture.
