Heat the olive oil in a large Dutch oven over medium-high heat. Add the pork cubes and brown them on all sides, about 6 to 8 minutes total. Remove the pork and set it aside.
Lower the heat to medium. Add the diced onion to the pot and cook until it softens, about 5 minutes. Stir in the minced garlic and cook for 1 minute more.
Pour in the crushed tomatoes and beef broth. Return the browned pork to the pot along with the rosemary sprigs, dried thyme, and dried oregano. Season with salt and black pepper.
Bring the mixture to a simmer, then add the cubed potatoes. Cover the pot and cook on low heat for 45 to 60 minutes, stirring occasionally, until the pork and potatoes are tender.
Remove the rosemary sprigs before serving. Ladle the stew into bowls and sprinkle with chopped fresh parsley.
